Melt a stick of butter in skillet. Add 1/2 lb. cubed velveeta cheese and stir until nearly melted. Remove from heat.
Quickly add 8 oz. sour cream, 1 can cream of chicken soup, and 1 small diced onion. Add 2 lb. bag of thawed hash browns. Put in a 9x13, buttered baking dish. Sprinkle lightly with bread crumbs or stuffing.
Bake uncovered 30 minutes at 350.

eh, not big on velveeta, so I'd use cheddar. Also, I'm on a sour cream break, so I'd use a cup of heavy cream or milk instead.
