this recipe is totally vegan, yummy and also quite simple if you cheat a bit. you need: frozen mashed butternut squash, one can of corn, part of one chipotle or jalapeno pepper, garlic, onion, a can of garbanzo beans, can of veggie broth, salt, pepper and sage. olive oil of course.
again, pour a fair amount of oil in pan. sautee 3or4 cloves of garlic and an onion with some salt and pepper till soft. add squash, corn, garbanzo beans, can of veggie broth, however much of the chipotle or jalapeno you want, and sage. simmer for half hour or so. maybe 40 minutes. stir sometimes. eat! if you wanted to be fancy you could buy fresh squash, peel, chop and use that. that takes alot more effort and time.

sounds okay but not a fan of squash or garbanzo beans. I'd use lima or navy probably.
