Benihana Japanese Fried Rice
This is a good recipe. I added more soy, no salt, and mushrooms.
2 cups uncooked long grain rice 2 eggs, beaten 2 cups frozen peas, thawed 2 tablespoons, grated carrot 1/2 cup diced onion 1 1/2 tablespoons butter 2 tablespoons soy sauce salt pepper
1. Cook the rice. Pour into large bowl to cool.
2. Scramble eggs in a pan on medium heat. Chop eggs into bits while
cooking.
3. After rice has cooled, add peas, carrots, eggs, and onion to the bowl.
Toss together.
4. Melt butter in pan on medium heat.
5. Pour rice mixture into pan. Add soy sauce, salt and pepper. Cook for 6-8
minutes, stirring often.

this is a vegetarian recipe john, but not vegan! vegans don't eat any animal products- dairy or even honey. this recipe has butter. but it could be made vegan by substituting olive oil for the butter.

Uh, wrong category lol Accidentally hit Vegan. Vegans sure are strict. But there is soy butter.
