Recipe Clone: KFC Extra Crispy Chicken
This is a good recipe that's close but not exactly like KFC. Careful with
the salt because MSG is very salty! We used a garlic-flavored MSG. Works
ell on chicken strips as well.
1 whole frying chicken, cut up 6-8 cups vegetable oil
Marinade: 4 cups water 1 tablespoonsalt 1/2 teaspoon MSG
Coating: 1 egg, beatfen 1 cup milk 2 cups flour 2 1/2 teaspoon salt 3/4 teaspoon pepper 3/4 teaspoon MSG
1. Trim excess skin and fat from chicken pieces. Preheat oil to 350.
2. Combine water, salt, MSG for marinnade in large bowl. Add chicken and
let it marinade for 20 minutes. Turn chicken to coat a few times.
3. Combine egg and milk in a bowl. In another bowl, mix coating ingredients
(flour, salt, pepper, MSG).
4. When chicken has marinated, transfer each piece to papper towel to dry.
5. One piece at a time, first coat chicken with dry mixture, then egg
mixture, then again with dry.
6. Fry pieces in hot oil for 12-15 minutes until golden brown.
7. Remove chicken to a rack or paper towels to drain excess oil for 5
minutes before serving.
