Inside-out Stuffed Peppers
This isn't a recipe for which I've accurately measured ingredients. It's mainly touch'n'go. It's your basic stuffed peppers but we get heartburn from the peppers, so rather than stuffing 8 huge peppers with meat, we mix in 1 chopped pepper into the beef.
beef, pork, and veal mix (the veal makes it softer) garlic, chopped onions, chopped green peppers, chopped Minute Rice (so it cooks faster) egg, beaten tomato juice sugar
Basically, you mix all of the ingredients, except the tomato juice and sugar, and form into quarter-pound balls.
Mix sugar into tomato juice. We use about a 32 ounce can and enough sugar to sweeten it. Pour into a large pot - big enough to not overflow once you add the meat.
Drop the meat balls into the tomato juice and boil about 90 minutes, until meat's done and rice is cooked.
