Slowly add 1/2 cup quick-cook grits to 2 cups boiling water, stirring. Gradually stir about 1/2 cup mixture into 1 beaten egg. Transfer back to pan to mix. Take from heat, add 1 cup shredded cheese. Stir to melt. Bake in casserole dish at 325 for 25-30 minutes.

I ate this but didn't bake i back in my grits days. We also do this with pastina, which has a similar but softer texture.
