Vegetable and Bean Chili
This is one of my experimental recipes that didn't turn out too bad.
1 tablespoon oil 2 teaspoons garlic, chopped 1 cup onion, chopped 1 cup corn 1 cup broccoli, chopped 1 cup carrots, chopped 1 cup celery, chopped 1 cup green peppers 1 medium potato, diced 1 can (19 oz) red kidney beans, undrained 1 can (14.5 oz each) diced tomatoes 1 can (8 oz) tomato sauce 1 cup beef broth 1 can (4.5 oz) green chiles 2 tablespoons chili powder 2 teaspoons ground cumin 3/4 teaspoon salt
1. In a sauce pan, heat oil over medium heat. Add onions and garlic; cook 4 to 5 minutes, stirring frequently, until onions are softened.
2. Stir in remaining ingredients. Heat to boiling. Reduce heat to medium. Cover; cook 15 to 20 minutes, stirring occasionally.
