Minestrone Soup
I believe this was from Barilla but I changed a few things. It was good but the spaghetti sauce was a bit spicy. If I do it again, I'll replace it with tomato juice.
Ingredients 1 cup onion, chopped 1 cup celery, chopped 1 cup carrot, chopped 1 clove garlic, minced 1 cup cabbage, finely chopped 1 cup peas 1 cup zucchini chopped 2 teaspoons salt 1/4 teaspoon black pepper 1 jar Tomato & Basil Sauce 6 cups chicken broth 1 cup pasta 1 can (15 ounces) cannelini beans 1 cup green beans 1/4 teaspoon oregano 1/4 teaspoon parsley parmesan cheese
1) Heat oil in large pot 2) Fry onion, celery, and carrots 2-3 minutes until onions turn translucent 3) Add garlic and fry 5 minutes until slightly brown 4) Add cabbage, peas, and zucchini for 1-2 minutes 5) Season with pepper and salt 6) Add Tomato & Basil sauce 7) Add chicken broth 8) Simmer a few minutes to a boil over high heat 9) Reduce heat and add pasta 10) Add cannelini beans and green beans 11) Add basil, parsley, and parmesan cheese 12) Simmer 20-25 minutes
