Orange Cream Pie
This is a combination of two recipes that I modified.
PIE CRUST
FILLING 1 packet orange gelatin 1 cup boiling water 1/2 cup cold water 1/2 cup orange juice 1 teaspoon lemon juice 1 teaspoon orange extract, divided 1/2 cup whipping cream 3 tablespoons powdered sugar
TOPPING 1/2 cup whipping cream 1/2 teaspoon orange extract 3 tablespoons powdered sugar 1 cup orange segments 1/4 cup grated chocolate
1. In a mixing bowl, dissolve orange jello powder with 1 cup of boiling water. Add 1/2 cup of cold water and let cool for about 15 minutes.
2. Add orange juice, lemon juice, and 1/2 teaspoon of orange extract and mix.
3. Place in freezer for 20 minutes until just partially set. Remove from freezer and break up the mixture using a whisk.
4. Beat 1/2 cup whipping cream until it thickens.
5. Add remaining 1/2 teaspoon of orange extract and slowly add powdered sugar, beat until thickened.
6. Add whipped cream to the jelly and fold in. Pour into the pie shell and place in the freezer for about 1 hour or until pie filling is set.
7. In a bowl, add 1/2 cup whipping cream and beat until slightly thickened.
8. Add orange extract and slowly add powdered sugar and continue beating until thickened. Spread whipped cream over pie.
9. Sprinkle with orange segments and grated chocolate.
