Eggplant Steaks
This was delicious!
1/2 cup barbecue sauce 1/4 cup olive oil salt and pepper 1 eggplant, sliced (1/2-inch) 1 zucchini, sliced (1/2-inch) 1 cup grated Parmesan 3 tablespoons chopped parsley, optional
1) Slice eggplant and zucchini into 1/2-inch slices.
2) Sprinkle salt on both sides of slices and set in a pan for 30 minutes.
3) Pat your slices dry.
4) Mix barbecue sauce & olive oil. Brush the sauce on both sides of the slices.
5) Bake at 450 degrees, until slices are browned,
6) Sprinkle grated Parmesan over all of the slices. Place back in the oven for 1 minute to brown the
cheese.
7) Sprinkle with chopped parsley.

I need to try eggplant again someday...I guess. The one time I had it I threw up and had the stomach virus (unless I was allergic to the eggplant) lol
