Super Veggie Quiche
This is really chunky veggie quiche that I created.
1 1/4 cups Bisquick mix 1/4 cup butter or margarine, softened 2 tablespoons boiling water 1 tablespoon oil 6 slices bacon 1/4 cup onions, thinly sliced 1/2 cup chopped mushrooms 1/4 cup chopped celery 1 garlic clove, minced 1/3 cup uncooked regular white rice 1 medium plum tomatoes, chopped 1/2 cup chopped spinach, drained and squeezed dry 1 cup shredded cheese 1 1/2 cups milk 3 eggs 2 tablespoons flour 1/4 tablespoon basil 1/4 teaspoon salt 1/4 teaspoon black pepper
1. Cook rice in water as directed on package.
2. Heat oven to 400°F. Grease bottom and side of 9-inch pie plate with shortening. Stir Bisquick and butter until blended. Add boiling water; stir until soft dough forms.
3. Press dough in bottom and up side of pie plate, forming edge on rim of plate.
4. Heat oil in skillet over medium-high heat until hot. Add bacon, onion, mushroom, celery and garlic; cook and stir 3 minutes. Crumble bacon as you fry.
5. Add cooked rice, tomato and spinach to fried mixture; mix well. Pour into crust.
6. Sprinkle cheese on top.
7. In medium bowl, beat milk, eggs, flour, basil, salt and pepper with spoon until blended. Pour into crust.
8. Bake at 350 for 35 to 40 minutes or until edge is golden brown and center is set.
